Description
Juicy chicken breasts smothered in a rich parmesan mushroom cream sauce and served alongside crispy herb-roasted potatoes for the ultimate comforting family dinner.
Ingredients
700 g baby potatoes, halved
2 tbsp olive oil
1 tsp dried rosemary
1 tsp dried thyme
½ tsp garlic powder
Salt and black pepper, to taste
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
250 g mushrooms, sliced
2 tbsp butter
3 garlic cloves, minced
1 cup heavy cream
½ cup chicken broth
½ cup grated parmesan cheese
1 tsp dried thyme
Fresh parsley, for garnish (optional)
Extra parmesan cheese (optional)
Red chili flakes (optional)
Lemon wedges, for serving (optional)
Instructions
1. Preheat oven to 220°C (200°C fan) and line a baking tray.
2. Toss the baby potatoes with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
3. Spread the potatoes on the tray and roast for 35 to 40 minutes, turning halfway through, until golden and crispy.
4. Season the chicken breasts with paprika, garlic powder, salt, and pepper.
5. Heat olive oil in a large skillet over medium-high heat and cook chicken for 5 to 6 minutes per side until fully cooked. Remove and set aside.
6. In the same skillet, melt butter and sauté mushrooms for 5 to 6 minutes until browned.
7. Add minced garlic and cook for 30 seconds until fragrant.
8. Pour in chicken broth and simmer for 2 minutes.
9. Stir in heavy cream, parmesan cheese, thyme, salt, and pepper. Simmer until the sauce thickens.
10. Return chicken to the skillet, spoon sauce over the top, and simmer for 2 more minutes.
11. Serve immediately with crispy herb potatoes and garnish as desired.
Notes
For extra flavor, use a mix of cremini and button mushrooms.
Freshly grated parmesan melts better and creates a smoother sauce.
Chicken thighs can be substituted for chicken breasts.
Store leftovers in the refrigerator for up to 3 days.
Reheat gently with a splash of cream or broth to refresh the sauce.
